  • It’s time to think about salad recipes for these hot summer days

    The hot, lazy days of summer arrived in our area a few weeks ahead of schedule this year, so it’s time to find some quick and easy cool foods to prepare.
    In our area, Indigo Farms Produce, Holden Bros. Farm Market and, of course, our Farmers Market in Shallotte have an abundance of lettuces, squash, berries, corn, cucumbers, peppers, peas, fruits, melons and tomatoes.
    Take home everything that looks good. Don’t worry about how you’re going to use it all—you only need a salad bowl and an appetite.

  • Is extra-virgin olive oil always the best oil to use when cooking?

     Olive oil has long been one of the most popular and healthy cooking oils in the world. This Mediterranean wonder has long been a top selling oil in America and throughout the rest of the world.

    Whether it’s used in cooking with sauces or used in dressings or just drizzled over fresh vegetables or pasta, extra-virgin olive oil, the highest quality of oil, has an acidity of less than one percent, according to the International Olive Oil Council.

  • Do you use a ‘secret ingredient’ for your summer potato salad?

     Summer barbecues mean ribs, steaks, hamburgers, hot dogs and plenty of baked beans and a variety of salads.

    My favorite summer salad is potato salad and everyone has their own special way of making it. Some like using white potatoes, while others like using red or Yukon Gold or even sweet potatoes. Whatever kind of potatoes you use, most contain a combination of onions, celery, peppers and hard-boiled eggs. Where the biggest difference comes in, though, is the seasoning.

    This June will be the 10th annual observance of National Safety Month, originated by the National Safety Council in an effort to promote public awareness and ultimately decrease the number of injuries and deaths.
    Kitchen fires kill hundreds of people and injure thousands every year in this country. According to the National Fire Protection Association, cooking is the leading cause of home fires and home fire injuries in this country. Whether you are cooking outside on the grill or inside in your kitchen, it is important to pay close attention to what you are doing.
