    It seems that everyone wants to find that perfect food, the one that’s going to solve all their health problems. I really don’t think there is such a food, but there are two groups of goods that can help improve your health and reduce your risk of chronic disease. What are these foods?

    Yes, you guessed it: fruits and vegetables.

    What do you think about these statements?

    ·      “My salsa is so hot and spicy no bacteria can grow in it.”

    ·      “I’ve added vinegar and lots of tomatoes to my salsa, I don’t need to pressure can it.”

    ·      “It’s my mother’s recipe for salsa; it’s worked in the past. This is how we’ve always done it, I know it’ safe.”

    I have seen learners of all ages scramble to write down every word a teacher said only to leave class with a stack of chaotic notes that do not help with studying later. Implementing a note-taking strategy that uses keywords, questions, notes and summaries will help you focus on relevant information and organize it for studying.

    When talking nutrition these days, one of the buzzwords — actually, four words — is high-fructose corn syrup (HFCS). It’s the subject of lots of discussion and questions among both consumers and those in the nutrition and health professions.

    A couple weeks ago I shared instructions for freezing tomatoes. It’s quick and easy and there is no need to blanch or cook the tomatoes first. I heard positive comments about this method of preserving tomatoes. People like quick and easy.

    If you’re a flatlander like me, it might be quite a while between your time at home and your visits to the beautiful Alleghany Mountains of West Virginia. I am, in fact, a big fan of eastern West Virginia, a fantastic place in the summer for natural history, and more especially, botany. I fell in love with the dark forests of this part of the country several years ago, led there my inveterate fellow-botanist and banjo champion, Bernie Cyrus.

    I’m not sure you can ever have too many tomatoes, but sometimes you may have more than you can use while they still have good quality. Perhaps there are just a few left on the plants and you don’t have the enough or the time and energy to can them. How about quick-freezing?
